Acetic Acid and Fermentation

Acetic acid is the compound that gives vinegar its characteristic sour taste and smell. For most of human history, vinegar has been produced via bacterial fermentation. In the presence of oxygen, certain bacteria can generate acetic acid (and produce vinegar) from several alcoholic drinks, including wine, cider an others. The main chemical reaction to synthesise acetic acid is as follows:

C2H5OH → CH3COOH + H2O

Exactly how vinegar originated is unknown, but it is likely it was due to problems during winemaking. After all, wine will eventually turn into vinegar if left long enough. Also, if wine is fermented at high temperatures, the yeast is destroyed and bacteria take over the process of fermentation.

After the discovery that vinegar could be used for many different purposes, from cleaning to cooking, its demand increased. The first commercial process to produce vinegar came from Germany in 1823. The method was carried out in a tower full with charcoal to increase the temperature. The trick in this method was fresh air ‘forced’ into the tower, cutting down preparation time from months to weeks. Presently, vinegar is made in a submerged tank culture, with vinegar constantly stirred and oxygen supplied from the top. This method again reduces preparation time from weeks to just a few hours.
