Acidic Nature

Acetic acid is the simplest carboxylic acid, which means the hydrogen in the centre of the carboxyl group (-COOH) can be ionised according to the reaction:

CH3CO2H → CH3CO2– + H

Due to this release of protons (H), this compound has an acidic nature in solution, although it’s usually classed as a weak acid. For example, vinegar has a pH of around 2-2.5 and less than 1% of the acetic acid molecules are dissociated.

Solvent Properties

Acetic acid in solution behaves as a polar solvent, similar to water and ethanol. It can dissolve polar compounds, including inorganic sugars and salts; as well as non-polar compounds, including chemicals containing iodine and sulphur. It can easily mix with other solvents, such as water, hexane or chloroform and it’s a popular solvent used in many industrial processes.
