Citric Acid Throughout History

The acidity of citrus fruits – lemons and oranges – has long been known. It’s believed the first reference to citric acid was from the 13th century in an encyclopedia titled “The Great Mirror” organised by Vincent de Beauvais.

However, it wasn’t until 1784 that Carl Scheele was able to isolate and purify this compound from lemon juice, and it took a further 100 years for its production to reach large industrial scale, initially based on the Italian citrus fruit industry.

Using Mould

At around the same time, C Wehmer discovered that certain types of mould – in particular, Penicillium – are able to synthesise citric acid from sugar, but this process only started to be used during the First World War, when this conflict disrupted citrus exports from Italy. This mechanism was further explored by James Currie and company Pfizer, finally using it on a large scale to synthesise citric acid.

This mould-based process is still used today, relying on cultures of Aspergillus niger mixed with sucrose and glucose to synthesise citric acid. Usually, cheap sources of sugar are used, such as molasses, corn starch or other sugary by-products. Once the process is completed, the bacteria are filtered out of the solution, and calcium hydroxide is added to produce calcium citrate. The final step involves treating with sulphuric acid to precipitate citric acid.
