Gastric Acid

Gastric acid, the main secretion in the stomach, is mainly composed by hydrochloric acid to ensure a low pH (typically between 1 and 2) to digest food. The secreting cells aren’t actually exposed to this strong acid, as they produce hydrogen (H ) and chloride (Cl-) separately and the acid is only synthetized inside the stomach.

The walls of the stomach are protected against the corrosive effects of this acid by a thick mucus layer and localised secretion of sodium bicarbonate, which maintains the pH slightly higher closer to the walls. If these mechanisms fail, the result can be very painful heartburn or even peptic ulcers.

The main function of hydrochloric acid is to eliminate virtually every pathogen present in food. In addition, its low pH not only converts enzyme precursor pepsinogen into pepsin, but it also denaturates proteins.

This makes it easier for digestive enzymes – including pepsin – to break them down into individual amino acids. As the food leaves the stomach, this acid is neutralised by sodium bicarbonate present in the duodenum.
