Reaction with Water

Sulphuric acid reacts with water in quite an exothermic fashion, and as such dilution should be done by mixing small amounts of acid to a large volume of water, rather than mixing water to the acid.

This way, the acid is always the limiting factor and protonation occurs in a controlled manner. Reaction with water involves the formation of hydronium ions (H3O), as well as bisulphate (HSO4) and sulphate (SO42-):

Step 1: H2SO4 H2O → H3O + HSO4

Step 2: HSO4 H2O → H3O + SO42−

Sulphuric acid is an excellent dehydrating agent, mostly because hydration of this chemical is thermodynamically favourable with a strong affinity to water.

As such, concentrated solutions can be used to remove water from other compounds, including carbohydrates. This reaction produces carbon, heat and steam.

This reaction is often used in schools by mixing table sugar and sulphuric acid, turning the white sugar into a dark brown rigid block with a smell of caramel as it forms carbon.
